Retain variable value between sessions in exe publish

Hi,
Does anyone know how "variable values that are set to retain between sessions" actually work for exe publish? The reason is as follows. I have 20 exes with menus with ticks on the menus for if a user has completed a section. The variables that determine the ticking are retained. If the titles are published to html, and a new user comes onto the computer s/he will want to reset the course. If you just clear out your cookies this will work. However, if they are published to exe, then clearing cookies doesn't work, at least not with IE.
So, I am wondering how the exe retains the variables? and how can I reset them? i.e without having to so something like "reset all variables" in the program. I want to be able to clear them out as to however they are being retained.
