HTML5-only publish setting

Curious about something. Is anyone using the new(ish) publish setting of "HTML5-only"? I develop and maintain a series of courses for a long-time customer, and we're in the process of republishing them all. I'd really like to move our technology forward and use the HTML5-only option, and ALL of our testing using this setting has been successful in Edge, IE11, Chrome, and Firefox. My customer, however, is worried that we might be reducing our compatibility and support for older browsers by not including a Flash backup.
What are your thoughts? Pros v cons of HTML5-only versus having the Flash rollover.

Thanks Adam. Was there any particular reason you chose to not use the Flash rollover? Were there any negatives or disadvantages inherent in that publish type?
I've been using html5 without any issues, but don't serve a lot of different kinds of customers with different browsers, etc.
We added the option because some customer's were having their course packages rejected from upload to their LMS for including the media player flash fallback (which is a swf file).
The media player fallback is primarily there to support IE 8 or to play flash content, if you don't need to support those then you should select the HTML 5 Only option.
