White text is treated as transparent when you render as an image - choose a just off-white colour to get round this.As for the other issues......they have all been mentioned before somewhere. It's mainly trial and error to be honest. Things like: Don't use the enter button if you want to space the text - use separate text boxes; Paste stuff into Lectora as unformated etc, etc. You'll soon get used to the quirks!!
