Emailing user entry

We are designing a course with a free form text box. We need to have access to the information the user types in the free form box. Ideally we'll include a submit button next to the free form box which emails us the user's entry.

Has anyone done this? Any ideas on how to program the submit button?

The course will be housed locally; it will not be linked to an LMS.

You can choose to email members the results of a test. So if you set up the information gathering as an incognito (or apparent, your choice) test you can then send the results to a Google Doc or email address. I like to recommend the Google Doc because emails can be a bother with protected firewalls and what not. Then you can set up the Google Doc to alert you via email when new information is entered.
