variables in email confirmations

I'm creating a Code of Conduct course that has a confirmation statement at the end where the user reads and selects 'I Agree' or 'I Do Not Agree'. When they select their choice an email is sent with their answer. Right now, both options (agree and do not agree) is listed with a variablevalue set to 'on' for their selection and null for the other choice. In the example listed, user selected 'I Agree'. I've had a request to remove the value they did not select, in the example below, the 'I do not agree'. How can I accomplish this?
