You can have multiple AUs within a single, published title as long as you publish the content as SCORM/Disconnected. If you were trying to publish the content as SCORM/Web-Based, that would have caused you to receive the error that you did. The reason you were getting the error message is because jumps between assignable units in a Web-published title violate the AICC guidelines for LMS direction of flow between assignable units.

Reading through the Help files, I wanted to set up pre-requisites (i.e., they had to do the chapters in order), and the only way to do it was by assigning multiple AUs.
I will go ahead and remove all of the AUs except one and go with that. Thanks again for your help.
