How do you update the expiration date for a user?

We have some curricula and courses that have expiration dates assigned to them. We want to, on a case-by-case basis, change the dates for them. I cannot find any documentation on how to do this, short of deleting the item and then reassigning it, which gives them the default expiration date of 60/90 days, etc. That isn't what we need to do, as some cases only get an extra week for the assignment.
