Audacity is a great tool and is fairly easy to use. A good headset plus Audacity will get you professional quality sound (or close enough). For headsets I've had great luck with Plantronics USB headsets with DSP that are in the $50-80 range on Amazon or elsewhere. We've used the DSP500 for a few years and added the DSP650 a year ago.
